I usually take two types of minced meat in equal proportions; in addition, half beef and lamb cutlets are good in a similar way.

You will need the following products: minced chicken and pork, onions, garlic, eggs, white bread, salt, pepper, refined vegetable oil, breadcrumbs.

To the minced chicken and pork add bread crumbs soaked in water, spices, chopped onions and garlic.

Beat in the egg and mix until smooth.

How to cook pork and chicken cutlets

Let's prepare all the ingredients - cut the pork and chicken into small pieces, peel the onion and also cut it into pieces. Grind the meat and onions in a meat grinder. To make the minced meat more tender, you can twist it twice.

Mix the crushed ingredients thoroughly, add salt and seasonings to taste. I prefer not to put an egg, because... it makes the minced meat more liquid. Soaked bread should also not be added, it will make the consistency more loose and there is a risk that the cutlets will fall apart in the pan. Heat a frying pan and add enough oil. We wait for it to warm up thoroughly and put the cutlets on the fire. If you don’t know how to shape cutlets or are trying to prepare them for the first time, maybe my advice will help you. I wet my hands with water or oil, scoop up some minced meat with a spoon, first make a ball out of it, and then squeeze it a little to make an oval. I adjust the edges so that everything is neat and send it to the pan.

After 5-7 minutes, the pork and chicken cutlets can be turned over to the other side. Another 5-7 minutes and the cutlets are ready.

We will make homemade minced meat, because... there is no doubt about its quality. If you still decide to buy minced meat in a store, buy only proven stuff. For minced meat we will use a not too fatty piece of pork and half a chicken breast. If you want completely dietary cutlets, don’t add pork, but use a whole chicken breast. But in this case, the cutlets turn out a little more dry; it’s still better to add a small piece of pork, it will add juiciness to the dish. We wash the pork and chicken fillet well in water and cut into medium pieces.


Place pieces of pork and chicken fillet in a chopper and beat them into minced meat. Of course, it is better to use a meat grinder rather than a chopper, but in the absence of one, you can use a chopper, or manually chop the meat very finely and mix it together.



Place the resulting minced meat in a deep bowl, add chopped onions, sour cream, salt and seasonings. For seasonings, I use paprika, ground black pepper and a mixture of dried herbs (dill, parsley and green onions). You can add ground dried garlic and turmeric - in general, choose spices to your taste. Mix everything thoroughly, I use a fork for this. Another important point - you can add an egg to the minced meat, or you don’t have to add it - the choice is yours, without the egg the cutlets will turn out no worse.



Mix the minced meat and flour well. We do this first with a fork and then with our hands. Knead our minced meat with flour like dough.


Pour breadcrumbs onto a small tray or convenient plate. Using a tablespoon, scoop up a little mixture of minced meat and flour and roll the meat into a ball with your hands.

Cooking process:

Let's prepare the cutlet mince. We thoroughly wash the chicken and pork meat, separate the films, and let the water drain. Pass the fillet, onion and garlic through a meat grinder. Add milk, eggs, salt and pepper to the minced pork and chicken. Mix everything well until smooth.

Pour vegetable oil into a frying pan and heat it up. Meanwhile, form cutlets, roll them in flour and fry on both sides until golden brown.

In a separate bowl prepare the gravy for the cutlets. Mix water, cream, ketchup, salt and flour and pour over the cutlets.

Let the gravy boil, turn the heat to low, add bay leaves, herbs, cover with a lid and simmer the chicken and pork cutlets for 30-40 minutes over low heat.

For a side dish, at this time, boil the buckwheat in a slow cooker or in the traditional way on the stove. When the chicken and pork cutlets are ready, serve in portions with buckwheat garnish.

Recipe:

Not all seasonings are created equal for chicken and pork, so I advise you not to add too rich seasonings to these cutlets. Add cumin with caution as... It goes perfectly with meat, but in chicken it’s just terrible.

I suggest using hops – suneli – in these cutlets. Not rich, tasty in combination with both chicken and meat.
